Brownie in cup

IMG_6641I have rested two whole days Monday and Tuesday and feel quite ok now. Ok enough for a choclate brownie! I often bake my cake or brwonie in a cup just enough for a few bites and most of the times that all you need. A huge cake is only for occassions when I want to feed guests or colleagues at work. Brownie in a cup is much lesser guilt and can be quickly whipped up in under 5 minutes.

Whole wheat flour : 3 tbsp in each cup

Sugar and jaggery : 2 tbsp

Cocoa butter/ oil/margarine : 2 tsp

Walnuts : 5-6

Choco chips : 2 tsp in each

Baking powder, cinamon : 1/2tsp each

Soya/almond milk/juice : 2-3 tbsp

Method:

Mix everything together in a paste form in the cup itself. The cups should not be more than 2/3 rd full to give it space to rise. You can use any kind of nuts and spices and sweet to garnish the cake/ brownie. Cocoa butter made thse crumbly chewy brownie like. Oil will make it soft and margarine will make it more cake like. Adjust the baking powder depending on the amount of rise/fluffiness you want. I put less to make it brownie like. Adjust your ingrediants to suit your taste. Experiment! Afterall it just a few bites in a cup!
